Today’s possibilities. 
The west and presumably east walls of the transept have been raised. The image below shows the line of that additional height and the 60˚ plaster line of the (possible) old roof line.

The image below shows an approximation of that pitch and the dotted line shows where that lines up with the turret (we think)!

We are guessing that after a collapse they spotted a problem in the new roof as the transept (due to the west wall) is off centre with the transept arch so they had to move the gable end right to overcome that problem. They corrected the visual appearance on the inside so they could ensure the best weather proofing on the outside.
